Baking Instructions

** Please note these instructions are for convection style ovens. If baking in conventional, please increase temperatures by 15*F and prolong baking times.

Croissants

  • Place frozen croissants on a tray, leaving appx 3” of space between each croissant.
  • Leave in a warm place(no warmer than 30*C), covered to not dry out. Proof for 3-4 hours, time will vary depending on room temperature and how frozen the croissants are from the freezer.

**It will be fully proofed if it has roughly doubled in size, has a jiggle like jello, and the layers are beginning to separate.

  • Preheat oven to 360*F, and egg wash croissants, and garnish as desired.
  • Bake for 15-18mins. Rotate halfway through if the oven is known to have hotspots. Time will vary depending on the strength of the oven and fan. 

**It will be fully baked when it is an even golden brown all around, and when lifted off the tray, it will feel light and hollow.
